Masala Idli

Popular breakfast in the south Indian cuisines.
Very easy to make light, fluffy Idli.
Some spices added to Idli make additional flavor.

Ingredients (For 15-18 pieces) Edit by Abeltje; in the shop it will be for 3 people

For Idli – 1 cup

Urad dal-1 cup
Rice -2 cup
Salt – 1/2 tsp
Sugar – 1/2 tsp
Baking soda – 1/2 tsp
Cooking oil- 2 tbsp

For Masala-

Urad dal-1 tsp
Curry leaves-5-7
Onion-1/2 cup finely chopped
Mustard seed-1 tsp
Tamarind pulp-2 tsp
Sambar powder-2 tsp
Green chilli-1 finely chopped


Step 1 – Wash and soak the urad dal and rice for at least 6- 8 hours)  in lots of water.

Step 2 – In grinder take dal  and  grind, make smooth fine batter (you can add 2-3 tbs water), grind rice and make smooth batter not very fine.

Step 3 – Take both batter in bowl and mix for 5-7 min then add salt,sugar,baking soda 1 tbsp  oil and mix again 7-10 minute, cover it proper and keep the   batter for fermentation for 8-10 hours.

Step 4 – After  fermentation  batter will become double ,take batter and mix 0nce again.

Step 5 – Take steamer /pressure cooker and heat it,grease idli molds and pour 1-2 tsp batter in each idli molds ,fill all molds , place idli molds in steamer /pressure cooker and steam idlifor8-10 minutes.

Step 6 – After 10 minutes take out idli mold and cool it for 1-2 minutes and remove idli from mold with the help of greased knife.Keep idli on bowl and cover it.

Step7-Heat  1 tbsp oil in a pan add mustard seed when seed crackle add urad dal roast till brown add onion green chili,cashew nut,curry leaves  saute it add sambar powder,tamarind pulp mix it add idli and mix well 1-2 minutes ,serve with coconut chutney.
